I believe that seasonal, local, organic, sustainable cuisine is not a fashion statement.  It is my responsibility as a chef to be able to create my delicious dishes by building relationships with local farmers and suppliers to not only ensure that my food is fresh and healthy, but that it has been harvested in a way that pays respect to our land and our sea.
